Boeren-Leidse ... cheesemakers.

Some traditions will never die, take for instant the Boeren-Leidse. This cheese is produced by only a dozen farmers, who learned the process of making this cheese from their ancestors. In the year of 1970 the number of dairy-farmers making Boeren-Leidse was declined to only 9. Nowadays this numbers is 15.

Why a Society?
Because of the small amount of farmers who'll produce the Boeren-Leidse, so the classical recipe of the product can be protected. The main goal of the society is the protection and keeping of the qualities of character from this cheese.

What are those qualities of character?

  • - red-brown coating
  • - an embrossed mark with crossed keys
  • - a little bit sharp edges
  • - a low-fat content (30 to 40% fat content)
  • - cumin-seeds added
The Boeren-Leidse is a handmade product, with a high standerd quality. By this reason it carries the exclusive name "Boeren Leidse met sleutels" (Farmers' Leiden cheese with keys). Only the members of this Union are allowed to use the relief / mark on their cheese.

Several times a year, cheese-examinations are held, on which graders inspect the quality of smell and taste. So the quality of the product is beiing guaranteed.
