"Boeren-Leidse" cheese

For many centuries, farmers in the region of the city of Leiden (Netherlands) have been producing Boeren-Leidse: farmers's cheese of Leiden. This cheese has been well known for its remarkeble taste. The consistence of this cheese is rather firm. This is because the cheese has been made of skimmed milk; this results in a low-fat percentage of between 30 and 40%. Because of this, the cheese has the state registered control mark "30+". As a result of the low-fat content, this 'semi-skimmmed' cheese can be preserved longer.

How does one recognize this cheese?
Boeren-Leidse can be recognized because of its red-brown coating. In contrast to many other cheeses, it's edges are sharp. This caused by the special way this cheese is being pressed. Note the official mark Boeren-Leidse on top. Only with this official mark, you can be confident that this cheese has been prepared according to the classical recipe.

How does the original Boeren Leidse taste?
The Boeren Leidse has a special, rich taste, emphasized by the addition of cumin seeds.
